All commercial dishwashers and catering equipment should be service at least once yearly, this prolongs the life of the equipment and keeps it in full working order.
A Break tank is a device install in a commercial dishwasher to prevent contaminated water from flowing back into the freshwater supply. It operates by feeding incoming mains water into a separate tank with an “air gap” (a simple opening at the top that acts as an overflow). In the event of a backflow from the dishwasher, contaminated water can only reach the break tank and overflow through the air gap, preventing it from entering the fresh water inlet.
The UK Water Board Regulations require commercial dishwashers in high-risk areas such as schools, care homes, nurseries, or hospitals to be fitted with a Break Tank if the installation is rated as category 5 or higher or where contamination of the water supply would be detrimental to hygiene and health.
Businesses must assess their level of risk and comply with the regulations.
The break tank is typically located internally within the dishwasher and does not impact its performance or dimensions. An external break tank unit can also be add to a dishwasher that doesn’t have one installed. Although it is generally bulky and takes up extra space. Not having a break tank will not affect the performance of the machine, as a device in the plumbing system may already perform the same function.
